We had SUCH a great time, and I was able to finish my scarf by the end of the weekend.
If you are looking for an easy (CHEAP), quick-fun craft, then I highly recommend purchasing a knifty knitter! You can purchase them at Wal-mart, Hobby Lobby, Michael's or various other places online. It took me a while to get started, but once I got the hang of it, the yarn and fingers started flying! I think you could easily finish a scarf in one weekend. Plus there are all kinds of youtube tutorials, patterns, and fun sites to help you along the way. I added some brown ribbon for a more finished look, but you can also add fringe (with the right pattern/tutorial).
Although I didn't get too fancy, provocraft.com was one of the best pattern sites I found. When I finally get around to adding a little more pizazz to my stitches...look out world!

My wife has gone crazy knitting. She just finished her first big project -- a shawl. Next on the list is a wrap, followed by a baby blanket for her maid of honor.
Holls you have to help me with my knifty knitter. I crochet, but want to knit, so I bought some of these last year and have failed miserably. I am uber crafty... but can't figure these out! We might have to meet up. We should do that anyway, but bring yarn.
